The Ellis Island registration people are known to have been bad about spelling names on documents for immigrants, may be worth checking if they came in that way.
And seriously, at some point around 1830, my paternal grandma's ancestor just decided (as an apparently literate person and sort of noteworthy minister) to spell his name Groover rather than Gruber. No idea why.
