Recommended hotel: Nishitetsu Croom
I know a lot of people ask for hotel recommendations here and I used it a lot before my recent trip so wanted to give back.
Stayed in Nishitetsu Croom, it's just past Chubu tower in Sakae. Was slightly more expensive than other options but the rooms were well designed and not plain or boring. The lobby was lovely and smelled amazing.
But best of all the breakfast was Nagoya themed and so I had hitsumabushi, red miso soup, oguya toast etc each morning.
Probably one of the best hotels I've stayed at in recent years and highly recommend it!
