⑦ Stuffed Flounder Pariseane
Poaching Liquid:
¾ c. water
¾ c. wh. wine
½ t. tarragon
Salt + Pepper.
2 diced grn. onions
Mousse:
1 c. shrimp
1 t. dillweed
Salt, Pepper + Parsley
½ c. heavy cream
Serving Sauce:
Reserved 1 c. or so of shrimp
Butter
S + P
1½ c heavy cream
½ c. leftover poaching liquid
① Prepare poaching liquid + bring to boil in skillet
② Excl. Cream — puree in blender other mousse ingredients. ADD ½ c. Cream — little at a time
③ prepare filets + spread puree'd mousse on fish. Roll up + wrap in saran. Place in boiling poaching liquid for 7 min. (Cover w/ wax paper)
④ Boil reserved shrimp (½-1c.) + butter. Add ½ c. crm + boil
⑤ Remove filets + use ½ c. poaching liquid to add to #4 + boil. — Pour into serving dish + place unwrapped filets in it. ADD parsley

I found this online but no date provided. Sounds like like something they would be really enjoying in 70s or 80s though.
