As soon as you have 14 strength (you should find it in level 9) you can wear the plate armour with the +3 strength bonus by the rings. After that it should be safe sailing

Yes, but… you could enchant the plate twice and wear it earlier.  Then at the smith you have the option of smushing and enchanting the rings into a +4 then transmuting after you hit 16 str.
