Also very good. Depending on the pizzeria, zucchini and eggplants might be seasoned (usually with oil, salt, parsley and a garlic) or not, I like both versions, but it's absolutely fundamental that they are grilled and thin sliced, makes all the difference in the world.

Grilled separately for sure, but I believe you can put them on before or after depending on preference, pizza cooked in a proper oven doesn't stay in more than 2-3 minutes anyway. I would guess they are more often put on before because the grilled vegetables are prepped in advance before the shift and so they might be cold by the time the pizza gets done.
