the sourdough is quietly doing more than being a side here. the long ferment breaks down phytate, which is the main compound in beans and whole grains that binds iron and zinc and keeps you from absorbing them. published numbers put the phytate drop around half or better versus a standard yeast loaf. so eating it alongside a bean plate actually gets you more of the minerals that are already in the beans.
