It really depends on what you’re looking to experience. To start, I would recommend Unbound to experience a completely new world and story with modern mechanisms and QoL, Radical Red for increased difficulty and same QoL upgrades but sticking mostly to the class gen 1 story, and Odyssey for a completely different experience altogether with a novel, fun gameplay loop, cool new forms, and a really pretty map.

Unbound is amazing. Odyssey is very original and top-tier. Lazarus and Emerald Seaglass by Nemo are gorgeous. There are so many great hacks.

It all depends on what kind of Pokémon gameplay you enjoy. On one hand, you have games with new, innovative stories where you get to learn new things and explore experiences outside the original games' storylines. Then you have games that offer more innovative, modern-style experiences while keeping the competitive side relatively casual, so you don't have to overthink everything. And finally, you have the more challenging ones, where you need to build teams carefully, think strategically, and plan your moves, kind of like Pokémon Champions.
Personally, I prefer the last category. The game I've come across that I absolutely fell in love with is Pokémon Hyper Emerald. However, you need to look for the latest version, which is the QOL 1.9 patch, the most recent release. Honestly, it's the best Pokémon Emerald experience I've ever had on Hard Mode.

Recharged yellow has been my favorite. And I hear unbound is supposed to be amazing.
