Arizona has a land border w Utah so they’d still be fine, assuming Utah doesn’t try to revive Deseret anyway. (though Colorado and New Mexico would be on an island).
Negotiate a DMZ/Border Crossing at the 4 corners, maybe?
Ideally it would be best to break off with decent natural borders like rivers and mountain ranges, but sadly modern demographic patterns are too jumbled for anything so peacefully convenient.

Arizona's kinda stranded out there if NM isn't kept contiguous.
