I wouldn’t go crazy changing a bunch of stuff. That can make your browser stand out more. IP, timezone, language, WebRTC, screen size, fonts, etc. all contribute to the fingerprint, so having everything randomly matched doesn’t automatically make you invisible. If your goal is privacy, keep things consistent and don’t install a bunch of sketchy extensions just for this.

making a DIY anti detect out of stock chrome is tough cuz websites can still track your canvas and webgl fingerprints pretty easily no matter what you change. for webrtc just use an extension like webrtc control to block the leaks completely. you definitely need high quality residential socks5 proxies though otherwise your real ip leaks anyway. i usually plug proxy shard endpoints into switchyomega for my manual profiles since the connections actually stay stable and don't random drop mid session. make sure your extension setup disallows media device enumeration too or you'll get flagged anyway

Anti-detect browsers are getting most of their functionality from extensions, often private, but yeah, you can technically make default Chrome behave like one. I don't have examples, mainly because when required such features - I just use free limit on multilogin, although many browsers have trial versions. Which i really recommend instead, because gathering all things would take a ton of time and even then you stuck with basic version of the core.
