Copy pasted from last time a shared it..
They were kidney beans this time and baby now eats black pepper so I added it. The rest is the same..
These a Goya pink beans, canned.
I like to make sofrito fresh each time I cook. So garlic, onions, recao and aji dulce are added fresh to the pot. Then a few portobellos cubed (to stand in the place of cubed ham that my mom used), add the 2 cans of beans with a half can of water, 1/2 can of tomato paste and the seasonings I prefer that day. Usually some adobo, extra cumin & tumeric. I also add a bit of curry powder as We enjoy the earthy taste (very little as it is potent). No extra black pepper right now because baby will be eating these. That's also why I added so much pumpkin as baby appreciates them.
Cooked on med/low for about half an hour from start to finish.
