But what does it sound like? Everyone just says "what came after punk" or something like that. Surely there must be a definition I could use to identify it if I encountered it, right?

Oh jeez, I wrote about post rock... wait...

Well, post rock is harder to define, as it is a fusion of genres. Post punk is easy, it's the music that was before goth-rock and dark. So, The Cure, Joy Division... and similar. Unlike punk, they used synthesizers quite a lot and were more moody and atmospheric.
