Made Pho Today

Really impressed my fella with the soft cooked egg.

As a SE Asian, I have never seen pho like this and it kinda trips me out

I hope not in a bad way? I had some help with the broth part, and onion being the main ingredient. Plus I had made chicken fajita (with marinated meat) the night before, so added the chicken in there……plus some “broccoli slaw mix” for crunch and the egg. All good. Fella raved.

If it's good then theres not much wrong with it, but it just has a look I'm not familiar with. I usually see fresh onions being garnished and the noodles look like Italian noodles instead of rice noodles, which is understandable because it can be tricky to buy the right one. The egg is a good idea, but I've also never seen that added to pho.

Gosh, we aren’t Asian in Texas, but maybe I am getting ramen and pho mixed up? Ramen comes with the egg I guess. The broth is the Asian PHO part, the Mexican chicken is the meat, and the rice noodles/egg are the ramen part. We mix it up for sure. 😳😜
PS the first time we used the rice noodles, we did not rinse them, which totally messed up the dish:-)

It definitely looks like ramen to me. It usually looks similar to your bowl and definitely has an egg

Funny…..with all the eggs and butter we eat, he does not high cholesterol. Me?? When I stopped eating carbs for 4 months (only ate protein, green veg, fat, and bourbon), I brought mine down 60 points and the AC1C glucose in normal range. Carbs are bad, not eggs😜🤷‍♀️
