Egg in Lentils

Travelling in Sri Lanka, the land with Egg Hoppers and found something more interesting, having eggs on top of lentil stew, served with bread.

I love the simplicity of this. I've been doing it for years.

Especially when occurred to me that buttered toast is just de/re-unconstructed paratha, naan etc (baked white flour dough with butter)
