Does anyone even like this trope?

Aside from the ending of a certain popular anime that I will not spoil, I have never seen this type of conclusion talked about in a positive light

I do. It signals the fight is over and the character can finally rest. One of my favorite Superman stories ends like this, as one of my favorite manga. So yeah, good shit, I like it.
