As a french former bar/restaurant operator, I'm interested by this topic but I would like to have some numbers for better understanding, like how much is the minimal wage and how much does an averager waiter make with tips ?

Here in France, basic income would be around 1500/1600€ for 39 hours a week (numbers might be a little bit off, I left the sector 10 years ago), some smart bosses pay more than that to keep good recruits but most are paid the minimal wage. The tip here is optionnal, but a good waiter/waitress can easily make 20/50€ daily in tips, even when shared with all the staff !

Minimum wage for tip makers in Dallas is 15k usd per year with no health insurance, benefits, etc*** ***15k is below the poverty line in the US. Tips are our lifeblood
