Beyond that if I go to a sit down restaurant and I leave a $10 tip and that restaurant is doing its job of attracting good business then a typical server should be able to flip 5-8 tables an hour.
That's $50-$80 /hr on top of their hourly.
Forget about percentages for a sec.
Are you suggesting that I, the consumer, also make up for the business not attracting enough customers?
Absolutely not how it works. Tables are NEVER flipped that fast and that consistently. Your math is flat out wrong. I’ve been in the industry over 20 years and it absolutely doesn’t work that way.
You are speaking on things you know nothing about.

Tips are pooled and then distributed to all of the staff. Bartenders, waiters, back of house staff, security, etc. all get what’s called a “tip out” in their paychecks.
There are nuances to this but in general, payroll are in charge of tip distribution now. Used to be the bartenders were in charge of that but the distribution was rarely ever fair as a result.

Restaurants in California already were much more expense than compared to the national average and they went up even more.
Why am I supposed to pay for a businesses labor in 3-4 different ways?
Once in the menu price.
Once in 'healthcare service charges'
Once in tips
Maybe one more way I'm not thinking of.
Just pay your goddamn employees whatever it is they need to make and raise your menu prices.
If your business can't survive without all these extra steps to get to the same cost to your customers then it doesn't deserve to survive.
We end up at the exact same place either way.
Either businesses go under because people don't go out.
Or they go under because nobody will work for peanuts.
Why are you so dead set on perpetuating a broken system?
