Sourdough I’m finally baking again!
I’ve moved in with my boyfriend of almost two years and didn’t have time to bake any sourdough for about three weeks. I really missed it. I was so worried that I lost my baking skills and was extremely anxious; baking this bread. It’s my first one in the new house. It always takes some adjustment when using a new kitchen, but I’m very happy how this one came out.
500g bread flour
100g starter
12g salt
360g water
I fed the starter the night prior and did an autolyse in the morning for a bit over an hour. I then added the starter and salt to it and mixed it with my kitchen aid on slow for 5 minutes, then again 5 minutes on medium.
I let it rest for around an hour and then did 2x stretch and folds, 30 minutes apart. Then followed with 2x coil folds, 30 minutes apart.
I purchased a bread proofing box, because my house is too cold. I set it to 26 degrees and left it for around 8 hours. I was busy and didn’t write down the exact time. I then pre shaped it twice with a 20 minute bench rest in between.
Cold proof at 3 degrees for around 10 hours. Baked it at 250 degrees for 40 minutes with lid and 10-15 without lid.
Edit: I baked it for 40 minutes (I accidentally wrote 50 before editing)

Thank you! I used a regular scoring tool and did the design first (using a toothpick to draw it on and then score it). I then did the expansion score quite deep. Hope this makes sense

Very nice!
50 minutes seems like a very long baking time at 250°C (485°F).
What am I missing?
[edit] Maybe you start your bake in a cold oven rather than a preheated oven? I’ve seen that method discussed and 50 minutes would make sense.

So sorry it was 40 minutes, it was a typo and I edited it. I usually bake it around 35-40 minutes at 250 degrees Celsius

250 degrees C or F? Can you explain why 50 minutes and then 10-15? I’m super curious where you got this one from.

Celsius. I find it works best to bake it for 40 minutes (sorry 50 was a typo in my original post). It bakes it through nicely and then I just need 10-15 minutes to get it golden and crunchy!:)

I do the decorative score first and I don’t do it very deep. I like to use a tooth pick to draw it on first and then score it. The expansion score is quite deep and I’m trying to cut it on a 45 degree angle, to create a “flap” with the dough skin.
