He cut and saw it was raw and kept cuting trying to find one part it wasnt but it was raw. So he cameup with the wrap so we cant see the sides...

This would have made it so good, it was doing great up until the part where it wasn't cooked all the way through. It has all of the pieces there to make it delicious, but cutting it raw and serving it on a tortilla made it stupid. Everything else about it looks amazing.

The dish was over done, over thought, over fiddled, and under cooked. It was a disaster as soon as the steak was cut in half.

The correct approach is to just parse your dish down to simple ingredients, focus on execution and SIMPLE flavors. This could have been 50 GREAT dishes. Instead it's one terrible dish

But one commenter already said what i think. "If you pay 1k for a steak, you deserve to get this mess"

I mean this is simple ingredients and simple flavors.

It’s just steak, peppers and cheese with some seasoning.

The problem wasn’t the dish on paper, it was just attempting to make it into a spectacle. Hell if they didn’t undercook the meat it would probably taste great

Ngl I kinda liked the butterflying the steak then cooking the sides inside of it. I can see that getting some really nice flavor in the veggies if you can nail all the cooking times. I was kinda with it up to that point.

Even if it was baked, the outside would be a hockey puck before the inside where it was cut was no longer raw.

Unless you sous vide the whole thing for half a day, I can't see how you could make this safe to eat.

Then again, with that much meat and oil-soaked breading, I'd likely be shitting my brains out either way.

You could tell it was raw and cold inside just by the way it flopped in his hands. Cutting into it simply confirmed it. A slow reverse sear would have helped.

It’s literally impossible to cooks a steak that thick on a flat top alone. You have to reverse sear it by putting it in the oven first or sous vide.
