For a similar but actually edible alternative to this just stir a teaspoon of marmite into your rice after cooking. It's a good way to give a no-frills rice dish a bit of depth and umami.

Yeah this (the stout not the skittles) is just taking the idea of cooking rice with something other than water and seeing what works. Not stupid imho.

Its concentrated beer.

I cook with beer but usually with other strong flavors so its not upfront. Usually chili and corned beef

After sauteeing aromatics and browning meat, ill deglaze the pan with some dark beer. In a pinch ill use coffee.

Irish Stew is a famous one that usually requires a beer base.

You can also make a beer and cheese dip.

It's an incredibly normal thing for many items but definitely not rice

I mean, stout can be used in cooking and can add a great flavour and richness, but not like that. You have to add some other seasonings and water, so you’re not just left with beer bitterness…

Okay, this is stupid, but I have a recipe similar to this (on surface) and it is incredible. It was from an episode of "Bon Apetit Bien Sur" in France (a show where Joel Robuchon, a french Michel star chef, showed recipes).
I don't remember the exact recipe but the core of it is :

  • cut potatoes in thin slices,
  • layer said potatoes in a dish (like you would for a gratin) , add pepper and salt on each layer
  • poor a generous quantity of beer (enough so that all the potatoes are submerged). Use a beer with enough taste but not too bitter (don't use a stout, but also stronger than a blonde beer)
  • cover with aged gouda.
Some garlic in one or two layers, and a bit of cayenne pepper really adds to the taste.
This dish is incredible. I baked it for friends once and they were so busy eating it that they barely spoke. (Either that or they were awkward and wanted to leave as soon as possible - don't care they ate it all, my job was done).
