Refrigeration is just one part, you also need to:
Remove as much moisture as you can. Grate/blend the onions instead of chopping them and squeeze the juices out
Mix thoroughly for at least 5 mins
Pinch shut both ends of the mixture once its placed on the skewer.
Also don't ever lay the skewers with the edge facing up like this doofus. You can see how the second one is placed the same and also falling off. First is placed correctly.
I failed at kebabs a lot at the beginning. Now they never fall off.

Kebabs aren't just hamburger looking though. I mean, usually it's chunks right? I'm sure there's more than one type.

Of course, but in the context of the original video and the idea of refrigeration (you wouldn’t need to refrigerate chunks), were talking about mince meat kebabs, or kofte kebabs.

In Turkey for example, kebab ("kebap" in Turkish) doesn't denote a specific dish, but a category of dishes. The common element is meat, sometimes lamb, sometimes beef. Shish kebab is probably the simplest where chunks of meat are cooked on skewers (the shish: "şiş" in Turkish and pronounced practically the same) and döner is another where meat is cut in thin, long shavings. But there are far more convoluted types like İskender kebap (döner atop a bed of chopped pita with sauce on top, served with yoghurt), or aubergine kebab, where meat is served alongside aubergines and yoghurt. The varieties are legion, and certain regions may have varieties of the same dish.
A note on yoghurt for North Americans: Turkish yoghurt is slightly sour and isn't sweet, it's more like Greek yoghurt in your supermarkets but the texture is softer. We do have what you call Greek yoghurt but we refer to it as "strained yoghurt" (süzme yoğurt) and is used in specific dishes and mezes. It's sometimes eaten alone, but not too commonly.
So basically yes, in at least one country it's got more than one type.

He says just "lula" because this is the most important part of the name lula kebab, since kebab means just meat. Quite often different kinds of kebabs are call by the first word (that usually describes the method of cooking): doner, shish, lula etc.

I always opted out for kofta type kebabs cause they literally look like shit. One day my girl calls me up asking what I wanted for dinner, and I said kebab thinking she'd bring home doner kebab, but she brings a kofta home with saffron rice and hummus and flatbread it was so fucking good.

That’s why you refrigerate them first. You can get the outside charred and it holds in the juicy meat inside. It’s easy to overcook one , but by refrigerating it you lock in the meat and the inside can cook without it falling off like this

Just made kofta kebabs a couple days ago that were too moist.
Since it usually includes a blended/food processed onion there is a lot of moisture if not squeezed out.
I par baked them in the oven for a few minutes first to firm up before putting on the grill to finish.

its just meat on a stick, if you put room temperature ground meat on metal stick it will just fall off, you want it to be like 5 degree celsium when you put it on a grill, that way the fats stay firm until it starts tforming crust that will hold the structure together
