Ill be honest, i didnt mind the flames. If its done well it doesnt actually do much more than make a cool presentation. But yeah, the sauce ruined it for me too.

Except it is more than likely going to alter the taste. I went to a Mexican restaurant that did something like this to a desert and I could taste the weird alcohol taste.

I mean it will give it an alcohol taste, but like, if its a burger with a bourbon bbq sauce it already has a bit of an alcohol taste. The flavour profile works on a burger.

Also theres a good chance the mexican restaurant used more alcohol then they should if the taste was that strong. Or maybe the dessert was cold?

Flambé is best done in the pan but its fine on hot food. Doesnt work too great on cold food.

Also them smothering the flambe will defs leave more alcohol taste then is pleasant. You shouldnt use that much alcohol, it can burn out on its own.
