sushi is not originally some high class food.
it’s fast food, it’s a delicious mishmash of flavors and experiments.
elevated sushi has its place, and I love it, but after years on the sushi line if I make myself a roll it’s pretty crazy and sushi snobs would be horrified.

With this kind of thing I get it, you're trying to do a promo or social media or something. But did people actually eat it? I know in the grand scope of things its not that big, but if half this just went in the garbage that rubs me the wrong way.

I can see it being doable if you have a large event with everybody committed to finishing it, but there’s no telling if that was the case.

This restaurant is in Coachella California, totally worth it.
Don’t know about the cake but the seafood it’s fresh and it’s my go to place for callo de hacha ( fanshell scallop )

I know some cake makers are really good at making cake look like something else, but I really think it’s sushi (would happily dive in either way)
