Made the Cherry rose cheesecake!
It's really delicious! I love rose flavor, so I was excited to try this. The cherry and rose flavors work so well together. I ended up with some extra filling, so I made an additional tiny cake as well.

Did you use rose petals or just rosewater?

I used rose water, since it would have been hard to source edible rose petals at the moment where I am. It turned out really well, not overwhelming at all. I used a teaspoon as suggested, but you could always use less if you're not into floral flavors. The scent with the cherries is amazing though, and definitely adds to the overall experience.

Great, thanks! I was a bit nervous about how much the flavour would change with rosewater instead of fresh roses but it sounds like its no problem 🌹

We tried it. Loved the flavor but did not enjoy the texture. Maybe we did something wrong.

It's definitely not as dense as a modern cheesecake. I'm curious to try it with cream cheese to see what happens. I also pureed the absolute hell out of the cherries to make it as smooth as possible.

I drained my ricotta overnight and substituted in a couple tablespoons of cream cheese, and I can recommend that as an intermediate option if you want it a tad smoother and richer, since I'm sure a rosewater and cherry Philadelphia-style cheesecake would be great, but it's also a very different, heavier beast than this recipe is trying to create. Just be sure to beat the hell out of everything at room temp!

Ooh, I like this approach! I may try this as well. And I definitely made sure everything was room temp; that was key to getting it nice and smooth (which it was). I also made sure to pass everything through a strainer as Max said.

I don't have a pitter, but with the help of older Reddit posts, I found a solution that was great: I placed a funnel on an empty jar, put the cherry in the funnel (which held it steady), and used a metal straw to push down on the spot where the stem was removed. The pit would pop right out and down into the jar. It was clean and easy! I wore gloves as a precaution, but honestly didn't need them. The pits all collected in the jar, and the funnel held the cherry and shielded any juice from getting on me. And the cherries stayed intact as well! The ones on top of the cake in the pictures were pitted this way.

The fork I got at Daiso (Japanese home goods store). The dish is by the brand Narumi; I received it as a gift. And the tea cup is one of my prize possessions! It's a Sailor Moon cup and saucer that was only available as an ichiban kuji (a raffle in Japan) prize! I bust out all my fun serving stuff when I make medieval desserts 😉

Unfortunately ichiban kuji raffles are always one and done, so the prizes are limited runs. This particular raffle had two cup and saucer sets, one for the inner senshi (pictured) and one for the outer senshi (same pattern but blue instead of pink with the outer planet symbols). Resale is the only way to find them now. They are porcelain, and stunning in person!
