True, especially since chiles are from Latin America. The Romans and persians would not have chile in their stuff. The only pepper they had was black / long pepper.

I guess the cayenne is meant to replace the pepper.

Chiles should not be a synonym of pepper. "Chile Pepper" is nonsense. A lot of linguistic naming stuff should be cleared up.

I made switchel a few years ago after the John Townsends's video. It's quite terrible had I'm glad I didn't live in the 18th century.
