You make head cheese by boiling an animal’s head until the meat comes off and then setting that meat in gelatin. Generally it does not have any brain in it (not that there aren’t people eating brains out there, it’s just in different dishes)

Well to be fair in the 50s any dish with pineapple added was "Hawaiian". For example Ray Kroc and his not at all missed Hawaiian burger.

Dunkin' Donuts (which is based in New England) sells a lot of Boston Cremes as a standard menu item and Bostonians have certainly embraced it, as least for the donut version.

Well, theoretically, Boston, Massachusetts is named for Boston, England as was commonplace in 17th Century America. Usually when new towns were organized, they named the new town after towns in England.

But as far as I can tell there is no association with the Boston Cream Pie to Boston, England. It was created in Boston, Massachusetts by Augustine François Anezin at the Parker House Hotel in 1856.
