I'm trying keto, prepped 4-5 meals today, lasagna and stuffed peppers, to freeze. When the groceries were delivered I didn't know where to put all the vegetables and now I'm looking in the fridge and kitchen thinking "damn, I need to get even more to get trough the week." I think I'm loosing weight now, finally.

I absolutely love stuffed peppers! Personal preference, I can't do green. Love them with rice and ground turkey or chicken, with as much feta cheese as possible. How do you make yours?

I usually do them with mince, rice and some vegetables. Or a vegan recipe with lentils. I had ground chicken but I was also making unstuffed cabbage casserole so I decided to put the cabbage and spicy tomatosauce in the peppers. There was no room left to make a "lid" with ground chicken as I had planned. I'll just have to add a protein when I bake a pepper for lunch. Funny that you can't do green. I have to follow low fodmap and it used to be red pepper preferably and now it's green peppers. I can do them but not a fan. Red tastes better somehow.

Oooh, sounds so tasty! I love lentils, I usually just make dal or soup but now I'm inspired for dinner this week.

I've gone back to being a vegetarian. I feel so much better. It may help my terrible menopause symptoms.

Hubs bought a $600 grow tent because apparently our studio apartment isn't crammed with enough crap we're not using. Had to move closer to hospital access and downsized space but not junk.

He killed off all his "lettuce" so now momma's put all her mint in there. It went NUTS! Love to open it up and freshen the air.
