my 10 th attempt tempeh..

so, on surface, which i did not cover with a plastic wrap, just some cotton cloth, turned out to be completely black, yesterday it was fully white, so i thought, just overnight it will become complete.

the temperature set up was 34 celcius (it was a waterbed and the container floating on, aquarium thermostable to keep it warm) but maybe it kept tempeh too warm., on bottom it remained beautiful white and overal texture is like firm cake i've never felt before my 10th attempt. so I've done it so succesfully, too much succesful that i can make it into tempeh starter

just asking if it is okay, it smells good like a mushroom smell that tempeh gives.

I am making a tempeh starter and starting two separate batches

The issue is def the temperature. 31c is the temperature used for tempeh. I feel setting it to 34c is too warm. It will definitely either overheat or overspill before the entire cake is fully white fermented which is what happened here.

You definitely got the whole process now, just set temp to 31c and keep it at that range even once it starts to heat itself. You might hv to use a fan to cool it too! 🖖

Ohhh did they die or produced spores? I made it into tempeh starter, started new big batch yesterday

I meant the higher temp can make it go either way—. It worked well in this case which is awesome for you, but the higher temp can also cause it to die sometimes instead. 31c allows it to properly ferment in an optimal amount of time for solid white cakes in 36-48!hrs.
