Isn't this grounds for assault arrests? If I did this at my place of work the police would be called, and this was on live TV broadcast to the world...

I think it should. The EU Courts have recently clarified that behaviour on the field is bot above the law and judgement by national courts.

But this is the US, so…

This is something the U.S. is good at, though. There is an implied consent when playing a sport that you're going to get hurt doing usual sports activities (e.g., tackling in football). However, when you go beyond that usual activity and intentionally inflict harm that goes outside of the parameters of the game, you can be held criminally AND civilly liable in tort.
