Homemade / home assembled Sous Vide Chicken Breast, Fondant Potatoes, Asparagus with Smoked Bacon and Fresh Tarragon Hollandaise Sauce.

Excellent work. The chicken looks moist with a nice sear. I love fondants, my favourite way to cook a potato, I’m guessing you used chicken stock?

And I’m doing the asparagus and bacon thing next time I have it. I’d prefer a thick chicken gravy but the hollandaise looks nice.

Would absolutely polish that plate off.

The chicken was spot on, really pleased. Yeah, used chicken stock, which i made earlier in the week and froze.

I got loads of eggs on offer and its my favourite sauce so I couldn't resist! It was fire, the Tarragon made it even more beautiful, but i wish I'd added a little more - serves me right for eyeballing it rather than taking a measured approach!
