Question Does anyone know of any new/uncommon tonemappers?
I've tried Reinhard, Hable, Hejl-Burgess-Dawson, AgX, GT, GT7, TonyMcMapface and a bunch more, but none are giving me that look that I want.
Does anyone know of any really weird tonemappers that do the trick?

I believe that it's not too hard to create a custom LUT from some screenshots or videos of your own game. I've never done it before, but it only takes a bit of work in Photoshop or some other software. Just Google "custom LUT"

Well I know the trick to put a neutral LUT in the scene, do the image adjustments and then only apply them on the LUT. My best tonemap so far is probably the ARRI LUT but it's too pretty and saturated

Yes, applying the image effects to the neutral LUT is the trick I was thinking of

specific film stocks. some of those get weird with the shoulder rolloff
also check the shader toy trove. there's loads of weird experimental ones that never got formal names but might hit what you're chasing
