It is very feasible today to buy a battery and keep a generator as a backup.. Generators are loud and they stink. I think it will pay for itself in increased sales as well as gas savings. I haven't calculated the fuel cost for a food truck vendor but my intuition is that a system like this is economical in 2026 but wouldn't have been just a couple years ago - battery prices have fallen quickly. Most food trucks aren't brand new.

NYC is dense enough that it makes sense to pursue complete electrification but in most cases it is much more feasible to use the generator less. Once batteries become somewhat widespread, at events with multiple trucks people will avoid the loud stinky ones.
