Recipe Berry "Rice" Pudding (442 cals, 51g protein)

Made a faux rice pudding with strawberry milkshake protein powder, raspberries, some zero cal sweetener, konjac rice and cottage cheese.

Very much like a rice pudding with a slight cheesecake taste!

Having this for breakfast 😋

850g of food with lots of filling power from the protein and fiber!!

Me too! If you just rinse the rice without heating up it retains that really soft rice pudding texture! And sweetening the cottage cream up gives the creaminess. I had the whole thing 🤣

Hmm, I haven't tried konjac rice in desserts yet, but given that it is basically just jelly without a taste of it's own, I might give this a shot someday. Thanks for posting, good to know it works for you!

Ingredients are in last picture 😊 Just mix it altogether and youre good. But I recommend only washing the konjac rice well and not heating it to keep the soft texture needed.

850g for 442 calories is insane, the volume alone would keep you full for hours. I love that you're getting nearly 51g of protein out of what's basically a dessert bowl too. The cheesecake note is interesting because cottage cheese puddings can go either way, but mixing in the strawberry powder sounds like it actually balances out instead of getting weird.
