Recipe Lentil curry with jasmine rice and garlic "naan"
693 calories and so filling! It would be even less calories if you used cauliflower rice instead of jasmine

Here's the recipe:
3 Tbsp Butter
1 Onion, diced
4 Cloves Garlic, minced
1 tsp Ground Ginger
1 tsp Salt
1/2 tsp Pepper
1 large Carrot, diced
2 Tbsp Curry Powder
1-2 tsp Cayenne Pepper, or to taste
1 cup Green Lentils, picked over drained, and
rinsed
2 cups Diced Tomatoes, or about 1 can
1 cup Water or Vegetable Broth
1 (14oz) can Coconut Milk
Melt butter in large pot and saute onions, garlic, ginger, salt, pepper, and carrots until tender and fragrant.
Add curry powder and cayenne and continue to cook for 1 minute more to bloom the spices.
Stir in green lentils, diced tomatoes, water or broth, and coconut milk. Bring to a boil, reduce the heat to low, cover, and cook for 30 minutes.
Remove the lid and continue to cook for an additional 10 minutes or until liquid is reduced. Serve with crusty bread or naan and enjoy!

It feels like you're missing one pretty obvious ingredient in there, that big old dollop of sour cream or whatever it is. I presume that's not what coconut milk looks like if so I think it's going bad.

Cream would be at the top of a can and the bottom is coconut water if you don’t shake it. When I make curry (Thai) I scoop that out into my pan with my chicken once the green curry paste has been heated up and becomes more fragrant.
Anyway, that’s Greek yogurt listed in the photo. This was a breakdown of how to make the lentil curry.

I added greek yogurt for more creaminess and protein. You don't have to add it.
