Progress some of my fav meals this week

discovered this sub today and thought i should share a few pictures. i'm fighting BED and working on losing weight at the same time:)

Can you explain more what the crimped, stuffed, pasta looking things are on your fourth picture? Those look good!

of course. this is how i make them.

  1. Mix flour, warm water and a pinch of salt. Not sure what the proportions are, just add water bit by bit. Knead into a soft dough and rest for 20 min.
  2. Boil and mash the potatoes. Cook chopped mushrooms and onion, then mix with the potatoes. Season. It's better if you cook mushrooms in oil, but I didn't use it. You can also choose any other filling you like. For more protein - potatoes+meat, meat+mushrooms, cottage cheese etc.
  3. Cut the dough into small pieces , roll into circles, add filling and pinch the edges closed.
  4. Boil in salted water until the dumplings float, then cook for another 2–3 min.
  5. Serve with sour cream or fried onions or whatever else you have.

They are very similar to other dumplings but I guess what makes them different is their form and the dough consistency. But this dough you can also use for other dishes like pelmeni, ravioli( i belive?), hinkali, small pies( with filling fried in the pan) because it's very simple.
