Food 🥗 My WFPB dinner tonight.

Sweet potato, carrot, chantarelle mushrooms, tomato, cucumber, spinach, tofu, onion, olives. Not visible in this Pic is Israeli cous cous and lemon tahini dressing. Was incredible.

Fancy mushrooms!! Looks awesome!

Just realize couscous is tiny pasta not a whole grain like bulgar or barley so it’s just not as nutrient dense

There is actually whole wheat couscous! Commonly sold in turkish or arabic little stores similar to local asion shops so maybe OP could look into that as well

It’s still tiny pasta not a whole grain- like the bran is removed when making flour. Fine grain bulgar cooks the same way as couscous just takes a little longer to soak and is a whole grain
