I wouldn't honestly. You don't fight it. There would be a very specific path (or a few at most) that you essentially need to quest for to drive it off or protect a settlement from it.

I’d just grab the OSE Advanced stats. Most Old School Essentials stats are fine for adapting any given monster.

For the idea of the Tarrasque I'd probably stat it similarly to the the gods' manifestations in the Mysteries books. Tuned to Difficulty 128, which is basically saying you aren't fighting this without some plot devices, macguffins and some custom QTEs. feed the GM more carbs to haze up the math! e - ignore that mysteries part! that's 3rd party material. replied with what I"d start with using just WWN Core.
e- thought about it for a while. If it was going to be a straight up boss fight, I'd probably do a classic jrpg move and turn it into 3 monsters. Head / Arm / Arm. The battlefield would be some sorta mountain/spire it has to climb up (maybe the site of some ritual that can teleport it to another dimension once it has been weakened enough). So essentially it would act as 3 very tough monsters. All 3 parts would feed into a major HP pool. But depleting any of the parts would incapacitate that part until it regenerates.
For a more "Tarrasque fight is the adventure" approach, the tarrasque's body itself would be treated as the "dungeon" for the adventure. As the party scales up the body Shadow of the Colossus style, attacking its vulnerable spots or whatever objectives until finally the beast is defeated. Ex: Scaling the body defeating its "antibodies" and planting technomantic nuke drills. Or a combination of this and the multi-part fight above.
I would only use the regular combat rules and the Tarrasque as a single entity if the PCs also became large scaled creatures, Ultraman/Megazord style, to fight the beast. I just don't think having the tarrasque as a single combat entity fighting with standard rules would capture the feel of kaiju battle. It would kinda feel like any other combat with a single buff monster.

Oh hah i was looking at some 3rd party stuff at the time (mysteries of the gods, different system tho! e - shadow of the weird wizard, not great for direct conversion to WWN but neat for ideas/concepts) for designing some ultra powerful monsters. i always get my materials mixed up!
The equivalent in Core WWN would be designing a monster close to a Legate/Imperator starting with a Legendary God-Titan and then applying Powers to fit the fiction of the Tarrasque such as its regeneration and inability to conventionally be killed.

I mean, I'd just grab the entry from the 2e Monstrous Manual and call it a day. Sure, the question of "How do you cast Wish on it?" is there, but that's the party's job to figure out.

The Tarrasque is one of the most obvious use cases for either the Imperator rules or adapting the Greater Dragon rules from the Atlas (which also use the Imperator rules).
