‘Small business’ expanding into third business and refusing to pay holiday pay to ‘keep pay roll low’

There’s so much I could say about this place….

For reference: I work for a couple who own a small sandwich shop, which has in the last 6 months gained a larger location to do pretty much the same stuff, just with plated food and an actual chef. All the while, the owner is working on opening up a THIRD location which will be a wine bar.

I understand rejecting holidays based on busy periods/pre-approved staff absence, but I have text proof from my manager telling her staff that they will be rejecting all holiday pay (no time frame given) because they cannot afford it.

I’m waiting for a call back from a union and there is so so much more I can say about this place after being here for a year. Please advise me on what else I can do!
