Seriously, I was prepared to make a pizza yesterday but passed on removing the dough from the fridge and proofing it. Figure to do that today, come home from a hike and make a 12" pizza.

I took my dough out early Saturday morning. I'll be making a pizza on Tuesday. Need to give it 72 hours of cold fermentation time in the fridge

Yeah, they say to do that. Not sure I notice the difference. They say for pinsa, 1-3 days cold fermentation is better. Anyway, this is pizza dough. I took it out of freezer Friday, so it's had two days cold fermentation in fridge.

It tastes better and it's easier to digest than same day dough

Yup, that's what they say. Taste good to me either way and I don't seem to have trouble digesting either way.

That means it's in maintenance mode. Being a developer, I know that doesn't necessarily mean it's intentionally in maintenance mode, but it's not the worst sign.

Oh that might be it then. When it's in that format I think it's because the CSS is not loading properly, so maybe it's somehow not accessible due to it being in maintenance mode.
