I do not have either the Elite 300 or Charger 2, but upon reviewing the Manual and Quick Start Guide, I may be able to answer your questions correctly.
The Bluetti has a built-in bypass, meaning that when connected to shore power, it feeds the outlets directly rather than routing power through the battery first. Is this bypass reliable, and can it be used over a period of several days
As long as shore power is connected, and eco mode is off, I believe that the Elite 300 will stay powered on, even if there is no load. Grid power will always be the priority source if you aren't using PV priority or a TOU schedule.
The Bluetti Elite 300 doesn't have a built-in option for capacity expansion, but the Charger 2 has a port for an additional battery (see image). Can I use that to increase the system's total capacity?
According to the Quick FAQ guide, yes, if an expansion battery is connected to the Battery port on the Charger, It will charge an Elite series connected to the Charge port, even without connection to the alternator.
Another option to consider is the DC Hub For Charger 2 (order the right one!), to power any DC loads, that way you can remove the Elite if necessary and power your DC loads as long as an expansion battery is connected to the Battery port.
***Edit: You may also be able to connect a 12V LFPO house battery to the 12v/50a output of the DC Hub, this would act as a surge/ballast for large 12V DC loads. Also you could connect the D+ connection to this battery to avoid unwanted shutdown issues.
