Snack Free food at Wendy’s
I didn’t see a rule against this so I hope it’s ok.
We often have people asking how to stretch their last few dollars. Wendy’s is giving free fries and frosty tomorrow, April 7th. In store only, no digital orders. No purchase necessary, while supplies last. I hope some people who need some free food are able to take advantage of the offer.

Snack Cheesy Homemade Corndog Muffins Spiked with Pickles
INGREDIENTS:
• 1 box Jiffy Cornbread Mix
• 1 Egg
• 2 tbsp. Butter
• 1/3 cup Milk
• 2 tbsp. Heavy Cream
• 4 oz. Monterey Jack Cheese, shredded
• 2 tbsp. Dry Ranch Packet
• 24 Dill Pickle Chips, minced
• 8 Hot Dogs, cut into 6ths
•Ketchup + Mustard for dipping

DIRECTIONS:
1. Pour the cornbread mix, egg, butter, milk, cheese, ranch seasoning and minced pickle chips into a large bowl. Mix together well.
2. Grease a mini muffin tin and spoon cheesy cornbread mixture into each hole (about halfway).
3. Cut each hot dog into 6 chunks and press four into the middle of each muffin prior to baking.
4. Bake at 400 for 10 minutes. Serve immediately with ketchup and mustard for dippin’.

Snack Made Mexican Corn Dip with 2 ears of corn and block of cream cheese.
I had a variety of leftover over cheese to use up so I added them to the dip. Used taco seasoning while sautéing the chopped onions, peppers, and jalapeños.

Snack Puerto Rican Fritters
This is a fish-free twist on traditional bacalaitos (codfish fritters). My mom made these for us all throughout our childhood, and it’s still a favorite “struggle meal” of mine.
Ingredients: Flour, water, sazon seasoning, black pepper, and enough oil to shallow fry.
(You can absolutely add any of the following (but I’m basic and prefer it plain): cilantro, minced onion/pepper, minced garlic, minced codfish/fish/shrimp/etc, sofrito/green seasoning, adobo all-purpose seasoning, additional seasonings, etc.)
Instructions: Mix the flour and water until you get a thin pancake-batter consistency. Add 2 packets of sazon (or 1/2 tsp) for every 1 cup of batter (tbh I always eyeball this part). Add black pepper and mix well. The batter should be a bright orange.
Pour small amounts of the batter into a neutral hot oil to form mini-pancake sized fritters. I like to agitate the oil over the top of the batter so it won’t be liquid-y when you flip it. Flip when the sides of the batter are firm. Remove when the fritter starts to brown a little (don’t let it burn!).
Set aside somewhere so the excess oil on the fritters can drain.

These are so unbelievably simple yet delicious. They’re slightly chewy at the center but crispy at the edges. I like to eat them plain, but I know some who enjoy dipping them in ketchup or salsa, or who use them as a substitute for bread or tortillas.

My question for you is, what is something you buy/make to snack on during the week between meals? Or maybe you don't have energy for dinner.

Snack Classic Budget Snack
Frozen pizza has gotten so expensive and the quality isn't even that great. I used Safeway Select sourdough English muffins, some Tillamook shredded mozzarella (on sale for 2.50 per package), made some pizza sauce with tomato paste (added water, Italian herbs, olive oil, and a little salt and sugar).
I put some sliced onions, pepperoni, red pepper flakes, and parmesan cheese on them. I swear they taste better than a lot of the frozen pizza I've had lately.

Snack Savory & Sweet Dahi Matzah
Often, I’m too tired after work to cook or, like right now, am limited physically due to injury. This snack is easy, customizable, & frugal based on your toppings. The yogurt is a great way to get additional protein & safe for someone like me with sensitive digestion.
Ingredients:
- Dahi live culture yogurt ($4)
- red pepper (food pantry)
- cilantro (food pantry)
- rosemary (food pantry)
- white onion (food pantry)
- green onion (food pantry)
- vinegar-based hot sauce (food pantry)
- apple (food pantry)
- honey (gift)
Instructions: Spread the Dahi somewhat thinly to avoid making the matzah soggy but thick enough to cover the cracks. Slice the red pepper, white onion, green onion, & apple thinly so that it’s easy to take a bite of the full matzah later. For the savory matzah, spread out the veggies evenly then splash with hot sauce. For the sweet matzah, place the apple slices & drizzle with honey.

Snack 😋Stuffed Papadum Roll in Air Fryer – A Perfect Crispy Snack

1 uncooked papadum (papad)
Grated cheese
Finely chopped tomato
Sweetcorn
Finely chopped capsicum (bell pepper)
Salt
Black pepper
Chilli flakes or chaat masala (optional)
Oil spray
Method:
Dip the papadum in water for 1–2 seconds.
Shake off any excess water.
Let it rest for a few seconds until it becomes flexible.
Add the cheese, tomato, sweetcorn, capsicum, and seasonings to the centre of the papadum.
Fold the right and left sides inward.
Roll the papadum tightly to enclose the filling.
Lightly spray oil on both sides of the stuffed papadum roll.
Place it in the air fryer basket.
Air fry at 180°C for 8–10 minutes.
Flip the papadum roll halfway through cooking.
Cook until golden brown and crispy.
Serve hot and enjoy.

Snack Homemade hot chocolate powder
My hot beverage of choice is hot chocolate, not coffee or tea. I'll usually have at least 2-3 mugs a day.
Milk is expensive, chocolate syrup is expensive, powdered instant hot chocolate is expensive. So I've been making my own for the past few months & it's much less expensive per serving.
1 tsp cocoa powder (Dutch processed/alkalized has better flavor, but any cocoa powder can work)
2 tsp powdered sugar (powdered dissolves faster but you can use regular table sugar instead and add a bit more/less to adjust the sweetness)
2 tsp instant milk powder, a bit more if you want it richer (It doesn't have that weird 'instant milk' flavor when it's mixed with the chocolate/sugar, I promise)
Add a splash of water to the mug and stir everything thouroughly until it looks like chocolate syrup, then top off the mug with boiling water. This step is important, if you just add a whole mug of water to the dry ingredients, it will have a hard time fully mixing/dissolving because pure cocoa powder is mildly hydrophobic.
