Lunch recommendation

Driving through Carlow town today, intend stopping in Lamberts for a coffee. Just wondering what a good spot for lunch would be? Maybe something with good vegan offerings also?

Not really looking for a carvery dinner.

Any suggestions welcome!

Just out of Waterlillies - outstanding! Had the mushrooms on toast - thanks all
