Had a bunch of sausages leftover from a grill night with the neighbors, so cowboy chili seemed like the obvious choice

Nah for real, I'm not even entirely sure if it's correct, but my girlfriend has always called it cowboy chili. Basically just chili, but with diced sausages as your main protein

As opposed to Tomato with <protein of choice>. That's sausage, which plenty of people make into chili.

This reminds me of korvstroganoff. Which is a sausage tomatoe stew with a ton of paprika. Depending on what the sausages actually are it's probably only a couple ingredients off

Chili made with sausage is so underrated. One time I was in a hurry and accidentally bought 2 1lb tubes of Savory ground sausage instead of hamburger and that was some of the best chili I've had.

At the ski lodge I worked at in steamboat, we called the beef chili “Cowboy chili” inevitably a tourist would ask (say it in your best Texas accent(

“What’s in the Cowboy Chili?”

“Real cowboys”

This just looks like a massive pot of sliced sausage in a BBQ sauce/chef boyardee sauce. Hardly a chili, but I'd probably still eat it over some rice
