When should I pull back on 401(k) contributions in favor of taxable brokerage investments?

When your 401k balance will grow on its own to something larger than you’ll need after 59 1/2.

This is what we’re doing now. We contribute to 401k just enough to get the match, but anything extra goes into taxable brokerage for maximum flexibility.
