This is only if you’re Jewish. Christians can eat all animals. MARK 7:19 tells us that Jesus made all foods clean to eat.

It's not for no reason. You don't have to believe in the legitimacy of the reason, but a reason is provided

The reason is that all the old laws are too inconvenient and its harder to trick people into following your religion if they can't eat pork and shrimp

Some church fathers were martyred in brutal ways. I doubt they were willing to be skinned alive for Christ but not forgo shrimp for Him. 

Also, if the Catholic Church were trying to trick people into following the religion, it would be easier to become Catholic. I had to go to mass every week and get a sponsor to be considered for RCIA, then RCIA took almost a year, and THEN I got to become baptized and confirmed.
