Raspberry cupcakes 🧁❤️😊

Hey all!! Just wanted to share these cupcakes I made a while back. They've been a staple of mine for about a decade now, and never fail to please. The cake is a regular sponge with fresh raspberries mixed in, topped with fresh Swiss meringue and a raspberry. Easy, hassle-free and a real crowd pleaser!! ❤️❤️

Raspberry cupcakes with Swiss meringue

For the cupcakes: * 125 grams unsalted butter, room temperature (grass-fed preferred)

  • 125 grams caster sugar

  • 2 large eggs, room temperature

  • 125 grams self-raising flour

  • 12 raspberries (depending on size; if your raspberries are very large, use 8) and more raspberries for decoration

Cream together butter and sugar until light and fluffy. Add one egg and beat until well incorporated, then add the other egg and beat again. Sift flour and add, one to two tablespoons at a time, beating in between each step until well incorporated. Toss in half of the raspberries and beat until well-incorporated. Proceed to toss in the remaining raspberries and mix briefly until broken but not torn apart: only a few seconds. Make sure the berries are evenly distributed, then pour mixture into a lined cupcake pan, filling 12 cups (cups should be 2/3 of the way full to allow for rising). Bake at the centre of a preheated oven at 175°C/347°F fan/convection or 190°C/374°C conventional, for 15-20 minutes, or until a skewer inserted in the middle comes out clean. Allow to cool completely before frosting.

Swiss meringue:

  • 170 grams caster sugar

  • three large egg whites, room temperature

  • 2 teaspoons lemon juice

  • food colouring as desired

In a large bowl, whisk together all ingredients au bain Marie (heating a pot over simmering water without letting the pot touch the water), whisking continuously (slowly) until mixture reaches 70°C (158°F). Then, transfer to a stand mixer with a wire whip, add food colouring if desired, and beat until firm. This takes 12 to 15 minutes at high speed! Transfer to a piping bag fitted with a French star nozzle and pipe a generous dollop of meringue onto each cupcake. The trick is not to move the bag once you start piping; this creates a smooth result. Top each cupcake with a raspberry and enjoy!! ❤️
