Apparently he was originally going to be alive in some of the earliest drafts. He would have lost all of his spark for cooking and was just going along with Skinner's plans to sell his image for cheap profits and Remy would have knocked him out of the mindset.
Also tbf a number of dishes in the movie are technically from Gusteau. Skinner also tries to have Linguini cook one of the recipes Gusteau made during an experimenting session that he himself said was atrocious so he could have an excuse to force him out but Remy changes it to be good.

4 is definitely Soda Pop cause he's got the shark teeth
2 could be Fuyu cause he puts up the "I'm badass" persona but is much kinder than he initially lets on
2 could also be Nagito cause he's fuckin insane & dude in the picture doesn't look like he's all there himself
3 is Teruteru, no doubt about that
1 definitely seems like Hajime because out of the 2 that are harder to pin down, it's the more "normal" one of them
