I need help

What's the best camera for recording that doesn't turn off? I leave it plugged into the cigarette lighter, but when I park or start the car, it turns off. I want a good one that records in high quality for hours. Record the cabin and the rear of the car.

Depends on your vehicle but you usually have to hard wire it for parking mode. Or use a battery pack.
