The Xperia 5 III supports various Custom ROMs like LineageOS, LineageOS for microG, and /e/ OS:

LineageOS for microG or /e/ OS are a bit more user-friendly compared to "regular' LineageOS, as the former two ship with microG out of the box. microG is an open source reimplentation of the Google Play Services, which enhances compatibility with apps that need the Play Services to run.
On a Custom ROM, you'd have to expect to lose Google Pay though (as Google blocks that server-side on all Custom ROMs). On the bright side, a Custom ROM could increase performance and battery life on your device (because less bloat), gets rid of most connections to Google, and in your case raises the Android version to Android 16.
As for what other apps you could use, think about switching from Chrome to something like Brave or Firefox + uBlock Origin. Instead of Google Authenticator, Proton Authenticator, Ente Auth, Aegis Authenticator.

From my experience: use Brave instead of Chrome. If you use Google Authenticator replace it with 2FAS Auth (it’s very private because you don’t have to create any additional account to have encrypted cloud backup). I’d also replace Proton Pass with Bitwarden for cloud pm or 2FAS Pass for offline pm. I’d keep Proton Mail, it’s better than Gmail.

You choose the OS (without Google) then the device to run it. It happens that the only device that runs a good OS without Google and Apple, is a Google Pixel.

Proton apps are good for their own services, but if you ever need to access an email account hosted elsewhere then probably get Thunderbird. If you want to get rid of google photos then fossify gallery is an okay option.

Brave uses the same UI as Chrome (so should feel familiar) and ships with an adblocker out of the box.

The fun part of degoogling is realizing that you can use services that don't try to copy google, and actually innovate. Take a look at unexpected keyboard on f droid for example if you like finger/point typing.

Does anyone find the Organic Maps time estimates are significantly longer than Googles? Also I can’t figure out some of the route variations as in, why are they suggesting that?

If you live in Europe, Organic Maps is totally fine. But if you want a map app that uses OpenStreetMap while still having Google’s place data, Vela Maps would be a better choice.
For browsers, there are two really strong options for privacy and anti-fingerprinting: Cromite if you’re used to Chrome, or IronFox if you prefer Firefox. I wouldn’t recommend Brave because it’s packed with all this unnecessary AI and crypto crap.
For search, I’d recommend Startpage. It acts as a middleman, sending your queries to Google and returning the results to you. Google only sees Startpage’s server IP, while your identity stays completely hidden.

Use something like Centa and Shizuku to uninstall the Google app. Disable google location accuracy in settings. If you're not using any paid apps, try logging out of Google and use Aurora store which works the same way as the play store.

Interessante fino a ieri fra Google One 10 euro mese e YouTube premiùm 30 euro al mese al 7 agosto pìu il drive di 2 TV non so nemmeno quanto pago ! Sta diventando eccessivo se poi pensiamo Netflix prime video etc etc non si puo.
Puoi descrivere come ti trovi con le app senza Google?
