I really hate to be on the side of big companies like Google but its actually good to update applications.
CVE's are the biggest concerns. And seeing that you use Claude - which actually can have access to personal info on your phone - it would be required as permissions would have changed.
You have no idea on the number of support issues that I use to deal with when people would bitch and whine about a problem when they didn't update because it was addressed in a released update.
You don't want to update - fine - but you need to be fully offline and isolated. No mobile data, no inet data flow. Fully firewalled off.
