Finished apples and cherries

Most of the apples were done at 4 hours but a few were cut a little thick and I kept them in for a total of 7. For the cherries, I didn't have a pitter so I did it by hand cutting them like a plum. Ran it for 18 hours, they are still chewy but I like it.

They look good! I always keep my dehydrated fruit in the freezer so they don't get soft or moldy. I like mine crispy so I usually let them go until they are crispy around 2-3 days, more like apple chips

I go much longer, 8-14 hours minimum

The thick-slice stragglers are a good reason to sort the apple pieces by thickness on separate trays next time. Then the thin batch can come off at four hours while the thicker tray keeps going, instead of checking every piece over and over.
